Gelatin Topping

In medium or small bowl add

1/8 cup water

Sprinkle 2 teaspoonfulls of gelatine powder over water.  Allow to sit for a few minutes until dissolved.

Add to gelatine 1 – 2 tablespoons chocolate syrup and 1 tablespoon peanut butter (smooth or crunchy)

Blend together.

Put on top of whatever you like 🙂

I like mine over frozen yogurt or ice cream….

Spaghetti Squash Pancakes

1 cup cooked spaghetti squash

1 egg, beaten

1/4 cup flour

1 cup sautéed mushrooms, onions and peppers

1/8 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

Blend all ingredients together.  Spoon onto hot, oiled pan and spread out to form pancake.  Cook 5 minutes each side.  Enjoy!

Avocado Banana Ice Cream

2 avocadoes

1 banana

1 tsp vanilla

1/2 cup almond milk

1 block unsweetened bakers chocolate

1/4 cup raw Agave Nectar

Put all ingredients in blender.  Blend until smooth.

Pour into container and freeze for 1 – 2 hours.  Serve.

Makes 4 servings @ ~ 225 calories

Ingredients (Makes 17 servings)

1/2 cup  white rice
1/2 cup  chickpeas
1/2 cup  quinoa
1/2 cup  chopped onion
1/2 cup  chopped tomato
1  egg
450 grams  ground chicken
1/2 tsp  black pepper

Directions

Heat oven to 350 degrees
Boil peas, rice, quinoa and chickpeas in 4.5 cups water until all water is absorbed.
Add veggies.
Blend chicken, egg and pepper.
Add meat to veggies and legumes.
Spoon into greased muffin cups.
Bake, covered for 40 minutes.  Remove foil.  Continue baking for 30 minutes or until tops start to brown.
Serve or cool and freeze
